What means malaxation in terms of olive oil?
This is part of the milling process of olives carried out in oil mills. This is done after grinding and before centrifugation. It consists of beating the dough or the already-ground olive paste of a period ranging from 25 to 60 minutes at a maximun recommended temperature of 28 degrees Celsius. During this process, the union and optimization, of the oil molecules occur, thus preparing for the subsequent separation of solids and water during centrifugation.
