What is an olive?

An olive is a fruit of the olive tree.  Composed of the stalk (stem), epicarp (skin), mesocarp (flesh) and endocarp (stone), which contains the seed or embryo. The olive is used in two ways: for fresh consumption once seasoned (table olive), or for extracting its oil through a milling process (olive from mill) which results in virgin olive oil.
