Virgin olive oil attributes?

There are negative attributes or defects and positive attributes or virtues.The "official" defects of virgin olive oil, which are those that appear on the regulated tasting sheet, are six: fusty/muddy, rusty/humidity, winey/vinegary, frozen olive, metallic and rancid. The three "official" positive attributes are: fruity, pungent and bitter. Likewise, extra virgin olives oils remind us of a multitude of fruits, vegetables, wild and aromatic plants.
